Food and Beverage English is a training manual with 12 essential English dialogues for hosts, waiters, cooks, managers and food runners in the hotel industry. These dialogues are the most important parts of the F&B service flow, including: (1) greeting guests, (2) seat guests, (3) introducing the menu, (4) accepting a beverage order, (5) describing the flavors, ( 6) Explanation of cooking methods, (7) ordering a meal, (8) ordering an egg, (9) checking the satisfaction of the guests, (10) retrieving spices, (11) paying the bill and (12) saying goodbye.

The aim of this guide is to help managers and their employees engage guests by mastering the most common and basic conversations. Dialogue uses minimal vocabulary, so more attention is paid to actual communication and role-playing, rather than memorizing endless new words without ever saying them.

Consistent with this approach, each lesson is only one page long and shouldn’t be longer than 20 minutes each so that managers and colleagues don’t spend too much time training and focus on what matters most: restaurant operations.

The lessons are marked by difficulty: “1 cup of coffee” is an easy lesson, and “5 cups of coffee” may require more review and practice. For all levels, dialogues consist of 5 sentences or less, each with no more than 10 words. Managers and coaches are advised to use these for conversational role play and verbal mastery as opposed to silent memorization.

At the end of each lesson there are specific questions managers need to ask employees to verify understanding. Colleagues are asked to provide the answers to these questions and only refer to the text when necessary. In any case, we encourage the trainers to always be supportive and model the results that their peers want to achieve.
